Grandmother Eddy's Arkansas Cornbread

2 eggs
2 c. buttermilk
1 t. baking soda
2 c. cornmeal
1 t. salt

Heat oven to 450.

Generously oil round skillet. Heat skillet in oven while preparing batter.

Beat eggs then beat in rest of ingredients until smooth. Pour batter into hot skillet until almost full.

Bake 20-25 minutes or just until set.

Serve piping hot with butter.
